The bet

Las Salesas is one of the most demanding stages in Madrid hospitality: the audience picks without second chances, the unit economics don't forgive, and the bar for design is high. The bet wasn't to compete only during the day or only at night — it was to double the productive hours of a single venue with two distinct brand concepts, operated as one business.

The concept

Gallobúho runs as two businesses under one roof. Mornings are Gallo: specialty coffee, natural light, long communal tables, weekend brunch, casual rhythm. As dusk settles the lighting drops and Búho steps in: signature cocktails, tapas, a curated wine list, and weekend DJ sessions. Same kitchen, same brand, two distinct audiences, two P&Ls sharing the same physical space.

How we built it

  1. Concept

    We bet on dual-concept hospitality before it became the obvious move. Gallo and Búho aren't seasonal — they are two brands that share one P&L and double the productive hours of the venue.

  2. Capital

    Five co-founders. Twenty-six investors across México and Spain. Formal corporate structure from day one — not the loose partnerships hospitality typically defaults to.

  3. Partnerships

    Multi-year beer exclusivity with Mahou. Financing closed with Santander. Two institutional anchors locked in before opening day, recognized as a trending Madrid venue by TheFork shortly after launch.

  4. Execution

    110m² designed by Skye Maunsell Studio × Jordi Veciana. Operations built to compound — and the numbers since July 2025 say the bet held.
