The bet
Las Salesas is one of the most demanding stages in Madrid hospitality: the audience picks without second chances, the unit economics don't forgive, and the bar for design is high. The bet wasn't to compete only during the day or only at night — it was to double the productive hours of a single venue with two distinct brand concepts, operated as one business.
The concept
Gallobúho runs as two businesses under one roof. Mornings are Gallo: specialty coffee, natural light, long communal tables, weekend brunch, casual rhythm. As dusk settles the lighting drops and Búho steps in: signature cocktails, tapas, a curated wine list, and weekend DJ sessions. Same kitchen, same brand, two distinct audiences, two P&Ls sharing the same physical space.

Multi-year beer exclusivity with Mahou. Financing closed with Santander. Two institutional anchors locked in before opening day, recognized as a trending Madrid venue by TheFork shortly after launch.
